Caesar salad made healthier with roasted chickpea “croutons”, kale, and a Greek yogurt dressing. Massage the kale leaves with a small amount of oil to soften them up before adding the rest of the ingredients. Kale is great in salads because it lasts longer than other types of lettuce.
Add kale to a mixing bowl. Drizzle with 1 teaspoon of olive oil and massage until the kale is softened. Add romaine lettuce
Make dressing by combining yogurt, mustard, Worcestershire, lemon juice, pepper, and grated Parmesan. Adjust seasoning to taste.
Pour the dressing over the lettuce and mix until evenly coated. Top with roasted chickpeas and more Parmesan cheese.

*If gluten free, omit Worcestershire sauce as it contains barley malt vinegar
