Combine all ingredients in a food processor and blend until smooth. Adjust thickness with extra tablespoons water or lemon juice. Adjust flavour with seasonings and lemon juice if needed.

*To cook beets, you can either boil for 10 minutes until tender enough to be pierced with a fork, or roast in oven wrapped in foil at 400 degrees F for about 30 minutes or until tender enough to be pierced with a fork.
*Bean dips usually thicken as they sit, so add additional water if needed.
