In a medium bowl, add the hot water to the couscous and cover. Set aside for 5 minutes.
In a large salad bowl, combine the cooked couscous, lentils, diced red onion, cucumber, spinach, cranberries, and feta cheese.
To make the dressing, add all ingredients to a container with a lid and shake until combined. Adjust flavour to taste.
Pour dressing over salad and toss to combine.
To make this recipe dairy free or vegan, do not add the feta cheese.
