Lentils are a plant based protein making them a great alternative to meats or animal proteins. These dried edible seeds take a shorter time to cook than beans and can be bought canned. Of all the legumes studied, lentils had the strongest association with a lower risk of type 2 diabetes. This recipe combines savory and sweet flavors for a delicious meal! It also works great for leftovers.

Directions

Step 1 

In a medium bowl, add the hot water to the couscous and cover. Set aside for 5 minutes.

Step 2 

In a large salad bowl, combine the cooked couscous, lentils, diced red onion, cucumber, spinach, cranberries, and feta cheese.

Step 3 

To make the dressing, add all ingredients to a container with a lid and shake until combined. Adjust flavour to taste.

Step 4 

Pour dressing over salad and toss to combine.

Tips & variations

  • To make this recipe dairy free or vegan, do not add the feta cheese.
