Heat oil in a large pot over medium heat.
Add onions and carrots. Cook for 5 minutes until the onions are softened.
Add grated ginger, garlic, and spices. Cook for 1 minute.
Add broth and lentils. Bring to a boil, before lowering heat to medium-low to simmer for 20 minutes or until the lentils are very tender.
Stir in the spinach in the last 5 minutes and season to taste with salt and pepper.
