Tofu Fresh Rolls

Try changing up a normal tortilla wrap for rice paper! We love adding different colourful ingredients to make a tasty and fun snack or lunch.

Directions

Step 1 

Combine all of the peanut sauce ingredients except the water in a bowl. Mix until smooth. Add the water 1 tablespoon at a time to reach a runny consistency. Set aside

Step 2 

Using a frying pan, heat water until hot but not boiling. You should be able to stick a finger in without burning yourself.

Step 3 

Soak one rice paper wrapper for a few seconds, until it has softened. Remove from the water and place flat on a work surface.

Step 4 

Add some cucumber, carrot, and cabbage to the center of the rice paper wrapper, making sure to leave at least 1 inch from the sides. Top with a line of avocado, and tofu.

Step 5 

Fold the bottom over the top of the fillings. Then fold both sides of the sheet in towards the center. Roll away from you firmly to enclose the filling.

Step 6 

Cover the roll with a damp cloth and repeat with the remaining rice paper wrappers. Don’t let them touch each other or they will stick together!

Step 7  

Serve the rolls with the dipping sauce.

Tips & variations

  • To make this recipe gluten free, make sure you are using gluten free soy sauce or tamari.
