Shrimp Spring Rolls

These spring rolls are not deep fried, making them a better-for-you option. They are easy to make, and the ingredients can be found in most grocery stores! Get creative with your fillings to add fun and flavour. Don’t forget the dipping sauce!

Directions

Step 1 

Combine all the ingredients for the dipping sauce in a small bowl. Set aside

Step 2 

Using a frying pan (or kettle), heat water until hot but not boiling. You should be able to stick a finger in without burning yourself.

Step 3 

Soak one rice paper wrapper for a few seconds, until it has softened. Remove from the water and place flat on a work surface.

Step 4 

Add the lettuce leaf in the middle of the rice paper, making sure to leave at least 1 inch from the sides. Top with the cucumber, carrots, avocado, and shrimp. Top with cilantro leaves.

Step 5 

Fold the bottom over the top of the fillings. Then fold both sides of the sheet in towards the center. Roll away from you firmly to enclose the filling.

Step 6 

Cover the roll with a damp cloth and repeat with the remaining rice paper wrappers. Don’t let them touch each other or they will stick together!

Step 7 

Serve the rolls with the dipping sauce.

Tips & Variations

  • Sambal oelek is a chili paste that can be found in most grocery stores in the ethnic section.
