This grain bowl is full of healthy fibre, vegetarian protein, and flavour! Try it out and sub your favourite veggie, or enjoy as is!
You can even serve it “unassembled” for picky eaters!
Prepare chickpeas and sweet potatoes as per recipes. Set aside.
Meanwhile, prepare rice as per package instructions. Set aside.
Fill a small pot with about 1 to 2 inches of water. Bring to a boil. Add broccoli florets, cover, and steam for 3 to 5 minutes or until bright green and tender. Drain and set aside.
Prepare Tahini Maple Dressing by adding all ingredients except the water to a jar and stirring well to combine. Add the water to thin out your dressing to your desired constancy.
Assemble the bowls. Add about ¼ cup of rice, ¼ cup of sweet potatoes, and ½ cup of chickpeas to each bowl. Top with broccoli, seeds, and a drizzle of the tahini dressing.
Substitute your favourite vegetables for the broccoli.
