Roasted asparagus is a delicious addition to your table, and can be ready in no time at all. Simply toss with oil, add your favourite seasoning, and roast!
Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment paper.
Cut 1 to 2 inches off the bottom of the asparagus to remove the woody ends. Place in a bowl and drizzle with oil, and sprinkle with salt and pepper.
Lay evenly on the baking sheet. Cook for 15 to 20 minutes or until.
Serve with goat cheese and sesame seeds sprinkled on top.
To make this recipe dairy free or vegan, omit the goat cheese.
Cooking time depends on the thickness of the asparagus. Thicker asparagus may need to be cooked for more time, thinner asparagus may need to be cooked for less time.
