The smell of banana bread being baked may be one of the best smells in the world. This recipe adds coconut for a tasty twist on the classic! It also uses less sugar and has more fibre than store bought banana bread!
Preheat the oven to 350°F (175°C). Grease loaf pan with coconut oil.
In a large bowl stir together the whole wheat flour, baking powder, cinnamon, baking soda, and salt.
In a separate medium bowl, mash the bananas. Mix in the brown sugar, coconut milk, egg, oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and mix just until combined. If you mix too much the bread will become tough!
Pour the batter into the loaf pan and top with the almonds and coconut.
Bake for 45 to 50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from the loaf pan.
