Salads are often considered to be boring, but this one is packed with chickpeas, quinoa, cranberries, and seeds! You can serve it as a side dish or as a light meal. You can even roast the chickpeas for an added crunch similar to croutons!
Make the dressing by combining all ingredients in a mason jar and shaking well to combine.
In a large bowl, add the spinach, cabbage, chickpeas, and quinoa. Add the dressing and mix gently to combine.
Top with the cranberries and pumpkin seeds.
Add more of your favourite toppings! Try 1 cup of roasted sweet potatoes, or try roasting the chickpeas first
