Muffins make a quick grab and go food and an easy snack. The natural sugar from the bananas mean the amount of added sugar can be reduced in these little morels! Whip up a batch on the weekend and then you are ready for your week!
Preheat oven to 350°F (170°C).
Line a regular muffin tin with paper liners or grease with butter or non-stick cooking spray.
Mash the banana together in a large bowl with the oil, brown sugar, egg, milk, and vanilla extract.
In a separate bowl, whisk to combine the flour, flax, baking powder, baking soda, salt, and cinnamon.
Add the dry ingredients to the wet ingredients and mix until they are just combined.
Divide batter between 12 muffin cups.
Bake for 18 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Allow to cool for 5 minutes before removing from muffin tin and allowing to cool completely on a cooling rack.
