Energy bites make for a great travel snack so pack them for a long day at school or as fuel before a big game. Despite their size, they’re loaded with healthy fats, a touch of sweetness, protein and fibre, so you’ll be sure to satisfy any sweet tooth or curb that mid-afternoon hunger.
In a medium bowl, mix together almond butter and maple syrup until smooth.
Add pumpkin puree, oats, pumpkin pie spice, salt, chia seeds, and pumpkin seeds and mix until combined.
Roll mixture into 10 balls about 1 tablespoon each. Allow to set in fridge for 30 minutes so they can firm up.
Store in an airtight container in the fridge for a grab and go snack.
