Cookies for breakfast? No way! This easy no-bake cookie recipe gives you healthier cookies, made without any butter, and sweetened with maple syrup and chocolate chips! They are full of seeds and oats for a healthy cookie you can even eat for breakfast.
Add the nut butter, maple syrup, and vanilla to a microwave safe bowl and microwave for 20 seconds. Stir together.
Add the chia seeds and oats to the nut butter and mix until combined. Allow to cool slightly before adding in the chocolate chips so they don’t melt.
Form into 8 to 10 balls and flatten slightly with your hands to make circles. Place on plate or in a sealable container.
Place cookies in the fridge for at least an hour to firm up before enjoying. Store cookies in an airtight container in the fridge.
To make this recipe dairy free, use dairy free chocolate chips or add dried cranberries instead
