These tasty lentil balls are a great vegetarian dinner option! They are similar to falafel, and we like serving them with tzatziki, rice, and veggies for a balanced meal. You can also make this recipe into a delicious vegetarian Bento Box!

Directions

Step 1 

Preheat oven to 400˚F (200˚C). Line a baking sheet with aluminum foil or parchment paper.

Step 2 

In a small pot, combine the millet, lentils, and 2 cups of water. Bring to a boil, turn down the heat and simmer for about 10 to 15 minutes until the millet is tender and the lentils soft. Drain any excess water.

Step 3 

In a mixing bowl, mash the white beans until smooth. Add the purple onion, garlic powder, salt, flax, paprika, cumin, oil, and hot sauce.

Step 4 

Add the lentils and millet, and mix well until combined. Mix in the cilantro.

Step 5 

Form the mixture into balls, about 1 heaped tablespoon in size. You should get about 24.

Step 6 

Place balls on a baking sheet and bake for 15 to 20 minutes or until they are lightly golden. Serve with tzatziki, veggies, and rice or pita bread similar to a falafel.

Tips & Variations

  • Millet is a grain similar to quinoa. It resembles small round seeds. If you can not find millet, you can substitute quinoa or brown rice in this recipe.
