Cookie Dough Energy Bites

These tiny tasty treats are dynamite. Wholesome goodness all wrapped up into a ball and no baking required!

Directions

Step 1 

In a food processor, add the oats and process until they make a flour.

Step 2 

Add the kidney beans, vanilla, salt, coconut oil, and maple syrup. Mix until combined. The batter will be quite soft.

Step 3 

Add the chocolate chips and pulse a few times to incorporate.

Step 4 

Dampen hands with a bit of water, and measure out about 1 tablespoon sized portions of the dough and roll into 15 equal sized balls. The slightly wet hands will make it easier to roll! Just be careful they aren’t too wet or they will make the bites soggy (see Tips and Variations).

Step 5 

Place in a container and freeze for 15 minutes to firm them up.

Step 6 

Store in the fridge in an airtight container or in the freezer as a grab and go snack.

Tips & variations

  • To make this recipe nut free, use coconut oil instead of almond butter or use a seed butter. To make this recipe gluten free, make sure you are using gluten free rolled oats.

  • Use sunflower seed butter or WOW butter to make these nut free for school.

  • If they are too sticky to roll, try using slightly wet hands to ensure the batter does not stick.
