Are you a sweet or savoury breakfast fan? Better yet, are you a taco fan? Of course you are. Try a breakfast taco to take your morning to the next level.
Heat frying pan over medium heat with 1 teaspoon oil. Add the green onions and cook for 1 minute until softened.
Add the black beans, salsa, and spinach and cook until spinach has wilted. Set aside
Wipe out pan and set back on medium heat. Add 1 teaspoon oil.
Whisk eggs, egg whites, milk, pepper, and salt together in a bowl. Add to the hot pan and scramble the eggs with a spatula until cooked through.
To serve, add 1/4 of the black bean mixture and 1/4 of the eggs to a tortilla. Top with cheddar cheese and any other toppings you would like.
*Use 5 whole eggs if not using egg whites.
