These zucchini fritters are a great way to eat your vegetables! They are fried in a small amount of oil, which adds flavour, but keeps them a healthier option.
Place zucchini and onion in a bowl, and sprinkle with salt. Let sit for 5 minutes. Place zucchini and onion in a clean kitchen cloth and wring out as much water as you can.
Place in a bowl and add the kale, egg, flour, flax, garlic powder, and pepper. Mix until combined.
Heat oil in a large non-stick frying pan over medium heat. Make the fritters about 3 tablespoons each in size. The batter should wet, but thick enough to form in your hands. Place batter onto frying pan and cook about 3 minutes per side until the bottoms are golden. Flip and cook another 3 minutes.
Place on a paper towel to drain any excess oil, or on a cooling rack. Enjoy!
Make sure to wring out as much liquid as you can from the zucchini and onion. If they are too wet, the fritters will not cook properly.
