This delicious tomato soup is made ultra-creamy with the addition of the beans which add protein and a smooth texture. Top with grilled cheese “croutons” for a delicious and fun meal your family will love!
In a large pot over medium heat, add the oil and sauté the onions and carrot until the onions are translucent. Add the garlic and cook for another minute.
Add the balsamic, tomatoes, broth, and white beans, salt, and pepper. Bring to a boil before turning down the heat to let the soup simmer for 20 minutes. Prepare grilled cheese for topping as per recipe.
Let soup cool slightly before blending soup until smooth. Return to pot and adjust seasoning to taste with salt and pepper.
Cut your grilled cheese sandwiches into ~2-inch squares. Top each soup with ¼ cup white beans and divide the grilled cheese “croutons” between each portion of soup.
If gluten free, use gluten free bread for grilled cheese or omit grilled cheese croutons from the recipe.
If dairy free, top with toasted whole grain bread cubes and omit the cheese.
