Personal muffins made in the microwave in 2 minutes flat, it’s a no-brainer! This quick and easy muffin recipe contains protein, whole grains, fruit and spices. Perfect for when you are in a hurry! Make a bunch ahead of time and enjoy all week long, or freeze so you have them stocked whenever you need a filling snack or breakfast.
Mash banana in a mug. Add egg, and mix until combined.
Add oats, cinnamon, vanilla, apples, and walnuts. Mix.
Microwave mug for 2 to 3 minutes. Allow to cool slightly before removing from mug by shaking the cup and flipping upside down.
Enjoy warm or at room temperature.
To make this recipe gluten free, make sure you are using gluten free rolled oats.
To make this recipe nut free, do not add nuts.
This recipe can be made ahead and stored in the fridge in an airtight container, or frozen. Double or triple the recipe and make a bunch to save for later!
