Mango salsa can be used for so many different things! Use as a topping for tacos, on top of chicken, or as a dip with tortilla chips!

Step 1 

To quickly pickle the red onion, boil 1 cup of water. Place the diced onion in the water for 30 seconds before draining. Add the sugar, vinegar, and onion to a mason jar and shake to dissolve the sugar. Let sit for 5 to 10 minutes until bright pink.

Step 2 

Combine the rest of the ingredients in a bowl, along with the drained pickled red onions. Season with salt and pepper to taste.

Tips & variations

  • You can use pickled red onion for this recipe as described in the directions, or you can use plain finely diced red onion.

  • If you don't have mango, this recipe also works with peaches or pineapple!
