Mango salsa can be used for so many different things! Use as a topping for tacos, on top of chicken, or as a dip with tortilla chips!
To quickly pickle the red onion, boil 1 cup of water. Place the diced onion in the water for 30 seconds before draining. Add the sugar, vinegar, and onion to a mason jar and shake to dissolve the sugar. Let sit for 5 to 10 minutes until bright pink.
Combine the rest of the ingredients in a bowl, along with the drained pickled red onions. Season with salt and pepper to taste.
You can use pickled red onion for this recipe as described in the directions, or you can use plain finely diced red onion.
If you don't have mango, this recipe also works with peaches or pineapple!
