Healthier Cereal Bars

Classic marshmallow cereal bars get an overhaul with healthier ingredients like high fibre cereal. These are fun to make and you can even add in different things to taste like unsweetened coconut, roasted seeds or nuts. Get as creative as you want!

Directions

Step 1 

Grease a 9x9 inch baking dish and set aside.

Step 2 

Heat oil in a large pot over medium heat. Add marshmallows and cook, stirring occasionally with a spatula until the marshmallows are melted.

Step 3 

Remove from heat and stir in vanilla, followed by cereal mixture.

Step 4 

Empty into prepared baking dish and use a greased spatula to spread the mixture into all of the corners.

Step 5 

Allow to cool in fridge for 20 minutes before cutting into 16 equal sized bars.

Tips & Variations

  • You can personalize these as much as you want! Add 1/4 cup unsweetened coconut, or roasted nuts or seeds for more protein!
