This recipe is perfect for when you want dessert but not all the mess and cleanup that comes with making one. A mug muffin can be made under 5 minutes and with minimal equipment required! Chocolate and raspberry are a delicious pairing already, but it would be just as tasty with dried cranberries instead. Make this for breakfast, on-the-go, or for when you need that midday sweet treat!
In a mug, mash the banana. Mix in the egg, and vanilla extract.
Add the oats, flour, cocoa, baking powder, cinnamon, maple syrup and cranberries. Mix until well combined.
Microwave for 2 to 3 minutes. Enjoy warm from the microwave or remove from the mug and let cool. Mug muffins store well in the refrigerator or can be frozen to be enjoyed later.
