There’s nothing about Quesadillas we don’t love – they’re quick and easy to prepare, filling, and delicious. Make these quesadillas for lunch, dinner, or even as a snack! We recommend to enjoy with a side of veggies.
In a large non-stick frying pan over medium heat, add 2 teaspoons of oil and cook chicken breasts and onions until chicken has lost its pink colour and is browned. Internal temperature of chicken should read 165˚F (74˚C) on an instant read thermometer when finished.
Add peppers, spices, and salsa. Cook for a few minutes until peppers are softened. Adjust seasoning with salt and lime juice.
Reserve chicken and pepper mixture and clean the frying pan. Heat over medium heat with 1 teaspoon oil.
Place 2 tortillas in the pan, folded in half, so that only one half of the tortilla is on the frying pan.
Add ¼ cup of shredded cheese to the bottom half of each tortilla, followed by chicken and pepper mixture. Top with another ¼ cup of cheese.
Once the bottom of tortilla is golden brown, carefully flip over and continue cooking on the other side until golden. Repeat with remaining tortillas
Cut each tortilla into 3 pieces and serve with salsa, guacamole, and a salad or vegetables on the side.
