Chicken Fajita

Fajitas are definitely a no-fail dinner option. You can’t go wrong! They are so easy to throw together and are incredibly delicious. They also make great leftovers to bring for lunch the next day.

Directions

Step 1 

Preheat oven to 400˚F (200˚C). Line a baking sheet with aluminum foil or parchment paper.

Step 2 

Place peppers, onions, and chicken in a large bowl. Add 2 teaspoons oil, chili powder, cumin, garlic powder, and salt. Mix until coated.

Step 3 

Add chicken and pepper mixture to the baking sheet and bake for 15 to 20 minutes. Internal temperature of chicken should read 165˚F (74˚C) when pierced with an instant read thermometer when finished.

Step 4 

Serve on whole grain tortillas with your favourite toppings like salsa, guacamole, and cheese!

Tips & Variations

  • To make this recipe gluten free, use gluten free corn tortillas instead of the whole wheat
