Walnut and Flax Carrot Cookie

Directions

Step 1 

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2 

In a large mixing bowl, whisk together oil, sugar, egg, and vanilla.

Step 3 

In a separate bowl, mix flour, oats, flax seed, cinnamon, baking soda, salt, and walnuts.

Step 4 

Mix dry ingredients into wet ingredients, fold in grated carrots and stir just until combined.

Step 5 

Scoop cookies onto baking sheet (1 to 2 tablespoons per cookie) about 2 inches apart. Bake for 12 to 15 minutes or until slightly golden.
