Tortilla pizzas make a quick, easy, and cheap dinner or snack! Most store-bought pizzas tend to be higher in sodium and saturated fats, so this alternative is not only healthier, but also fun to make. The topping choices are all up to you – make it vegetarian by subbing tofu for meat, and add whatever vegetables you have on hand.
Preheat oven to 400˚F (200˚C).
Lay tortilla on baking sheet and spread tomato sauce on top leaving a 1/2 inch border.
Arrange mushrooms, onion, pepper, chicken on top of sauce and top with mozzarella cheese.
Bake for 8 to 10 minutes or until cheese is melted and edges of the tortilla are golden.
Enjoy with fresh veggies on the side or a side salad.
