This is the easiest quiche you’ll ever make. The crust forms while it bakes! You can add your favourite veggies or throw in any leftover vegetables. It’s a tasty and sneaky way to add more vegetables to your breakfast!
Preheat oven to 350˚F (175˚C). Grease the pie plate with butter or cooking spray.
In a frying pan over medium heat, add 1 teaspoon of oil. Cook the green onions and peppers until softened. About 5 minutes.
Blend the eggs, milk, flour, and cornmeal in a blender until smooth. You can also whisk this together making sure it is very well blended.
Add the pepper mixture and cheese to the bottom of the prepared pie plate. Pour over the egg mixture. Bake for 30 to 40 minutes or until the quiche is golden, cooked through, and slightly jiggly in the center. The internal temperature should read 165˚F (74˚C) on an instant read thermometer.
Serve with a side salad for more veggies!
