This quinoa bites recipe is packed with nutrition and have a touch of added sweetness making them the perfect treat for a school lunch, after school snack, or even after dinner dessert!
Quinoa not only provides fibre, vitamins and minerals, but also protein making these little bites super filling!
Cook quinoa according to package directions. Preheat the oven to 350°F (175°C). Grease a muffin tin.
In a large bowl, combine the cooked quinoa, oats, cinnamon, salt, vanilla, sugar, coconut, and apples.
Add in the egg and mix until well combined.
Evenly distribute the mixture into the muffin tin. Press firmly into the bottom. Bake for 20 to 25 minutes or until golden around the edges.
Melt chocolate in a microwave safe bowl or on the stove top (see tips and variations). Allow to cool before dipping in chocolate.
To make this recipe gluten free, make sure you are using gluten free rolled oats.
If using the stove top, heat a pot with 1 inch of water over medium high heat until boiling. Place chocolate in a metal bowl and place on top of the pot so it is not touching the water.
