These mashed potatoes are even more nutritious! Instead of just potatoes, they also have parsnips and cauliflower mashed in. This adds veggies, as well as more fibre and nutrients.
Add cauliflower, parsnips, and potatoes to a large pot filled with water. Heat over medium-high heat until boiling. Turn down and simmer for 20 to 30 minutes or until everything is tender when pierced with a fork. Drain.
Add butter to vegetables, and mash with a potato masher until as smooth as possible. To make the mash smoother, you can add ½ of the mixture to a food processor and blend until smooth. Mix this back in. Season to taste with salt and pepper. If the mash is too dry, add milk.
