Chocolate and Seed Energy Bars

These chocolate energy bars are a delicious and healthy snack! They are sweetened with dates and are filled with healthy seeds and coconut for an easy-to-make, no-bake treat!

Directions

Step 1 

Add the pitted dates to a bowl and cover with boiling water. Let soften for 5 minutes. 

Step 2 

Melt the chocolate and the coconut oil in the microwave, in 30 second increments, stirring between each 30 seconds.

Step 3 

Drain the dates and add to the bowl of a food processor. Process the dates until finely chopped. 

Step 4 

Add the melted chocolate, and the rest of the ingredients to the food processor and mix until a dough forms. 

Step 5 

Line an 8x8 inch baking pan with parchment paper, so that it comes part way up the sides. Empty your mixture into the pan, and press down evenly into the corners. 

Step 6 

Refrigerate for 15 to 30 minutes to harden. Remove from the baking pan, and slice into 16 squares. Store bars in the fridge. 

Tips & Variations

  • To make this recipe gluten free, make sure you are using gluten free rolled oats

  • You can substitute any type of nut or seed for the pumpkin seeds
