These easy chicken roll-ups will be a new fave school lunch! The taco seasoning adds a tex-mex flavour, and the chopped peppers add a tasty (and healthy) crunch. Kids love to help make these too! Have them help mix ingredients, spread the chicken mixture on the wrap, and roll them up.
Shred chicken breast and add to a bowl. Mix in cream cheese and taco seasoning.
Add green onions and bell peppers to the bowl and mix until combined.
Spread mixture evenly over a tortilla. Add a 1/2 teaspoon extra cream cheese to the edge to help seal the roll, and roll up tightly.
Place on a plate (seam-side down) and chill for 15 minutes. Cut each tortilla roll into 1-inch pieces.
Serve with hummus and desired veggies on the side.
If you do not have taco seasoning, use 1-2 teaspoons each of ground cumin, chilli powder, and garlic powder
