Dates are used to bind everything together, add natural sweetness, and a bit of extra fibre that will help keep you full for longer. You’ll be surprised how satisfying they are with just one bite!

Directions

Step 1 

Soak dates in hot water for 5 minutes to help them soften. Drain dates and process in a food processor until they have broken up and come together into a ball or paste.

Step 2 

Add cocoa powder, almonds, coconut, water, vanilla, and almond extract. Process until the mixture comes together. If it is too dry to form into balls, add another tablespoon of water.

Step 3 

Remove mixture from food processor and roll into 12 even balls. Roll each ball in the 2 tablespoons of coconut.

Step 4 

Let sit in fridge to firm up for 30 minutes. Store in an airtight container in the fridge, or in the freezer.
