No Bake Pumpkin Spice Granola Bars

Pumpkin spice everything! Forget the oven, these no-bake granola bars are a healthier option. They are a great ‘grab and go’ snack for anyone who is on-the-run.

Directions

Step 1 

Line a 9x9 inch baking dish with parchment paper.

Step 2 

In a food processor, pulse the oats, pumpkin puree, nut butter, maple syrup, pumpkin pie spice, and vanilla. Mix until just combined, scraping down the sides as needed.

Step 3 

Empty into a bowl and fold in the pecans and chocolate chips.

Step 4 

Spread the batter into the prepared pan and press very firmly and evenly into the container. This will help the granola bars stick together.

Step 5 

Place the bars in the fridge for 2 hours, or the freezer for 30 minutes. Once firm, cut into 16 bars. 

Step 6 

Store granola bars in a sealed container in the fridge.

Tips & variations

  • To make this recipe gluten-free, make sure you are using gluten-free rolled oats.

  • You can make this recipe nut-free by using a seed butter.
