Line a 9x9 inch baking dish with parchment paper.
In a food processor, pulse the oats, pumpkin puree, nut butter, maple syrup, pumpkin pie spice, and vanilla. Mix until just combined, scraping down the sides as needed.
Empty into a bowl and fold in the pecans and chocolate chips.
Spread the batter into the prepared pan and press very firmly and evenly into the container. This will help the granola bars stick together.
Place the bars in the fridge for 2 hours, or the freezer for 30 minutes. Once firm, cut into 16 bars.
Store granola bars in a sealed container in the fridge.
