Tasty energy bites made with protein packed quinoa and delicious dried mango and apricots. Try this recipe out with your family for a fun activity and make something delicious!

Directions

Step 1 

Boil water and soak mango and apricots for 5 minutes to soften. Drain.

Step 2 

Add soaked dried fruit to the bowl of a food processor and blend until almost smooth with no large pieces. Scrape down the sides of the bowl as needed.

Step 3 

In a large bowl, add the cooked quinoa, blended dried fruit, coconut, turmeric, flax seeds, tahini, and lime zest. Mix well.

Step 4 

Wet hands before forming the mixture into balls the size of 1 heaped tablespoon. Wetting your hands helps the mixture not stick while rolling. Roll formed balls into extra toasted coconut and place on a plate.

Step 5 

Place in fridge for 1 hour to set. Energy bites will remain soft, and should be stored in the fridge. You can also freeze energy bites for later!
