Preheat oven to 350˚F (175˚C). Line a baking sheet with parchment paper.
In a medium-sized bowl, combine oats, flour, baking soda, and salt.
In a smaller bowl, add melted coconut oil. Whisk in vanilla, honey, and egg.
Add wet ingredients to dry ingredients and mix until just combined. Fold in chocolate chips.
Place batter in fridge for 10 minutes to chill before scooping into 12 equal sized cookies and placing on the baking sheet.
Bake for 10 to 12 minutes or until slightly golden on the sides. Allow to cool on a wire rack.
