There’s nothing quite like chicken soup for a comforting meal, or when you are feeling a bit under the weather. It’s a one-pot meal that is so easy to make.
Heat oil in a large pot over medium heat. Add the onion, carrots, and celery, and cook until onions are softened.
Add the chicken stock and chicken, bring to a boil and then turn down the heat to simmer. Cook until the vegetables are tender (about 20 minutes).
Add the noodles directly to the soup, and cook as per package directions. Season to taste with salt, pepper, and lemon juice.
Add more stock or water as needed if the soup gets too thick. Serve with lemon and fresh parsley if desired.
If too much of the water evaporates while you are cooking the soup, add the extra chicken broth to thin the soup out at the end.
