This tasty muffin classic is lifted to a whole new level with this recipe! Applesauce and dates provide the moisture for this delicious baked treat and you’ll get loads of fibre to help keep you moving!
Preheat the oven to 350˚F (175˚C). Grease a muffin tin or line with paper liners.
In a medium bowl, whisk together the egg and molasses.
Add the milk, bran cereal, and vanilla. Set aside to soak.
In a large mixing bowl, add the flour, baking powder, baking soda, salt, and sugar.
Add the wet ingredients to the flour mixture and use a spatula to stir until just moistened. Stir in the dates (save a few to sprinkle on top).
Divide the batter into the muffin tin and add the leftover diced dates on top.
Bake muffins for 18 minutes or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before removing from the muffin tin.
