The perfect summer dessert! Make this when peaches are in season and serve with a scoop of vanilla ice cream or vanilla Greek yogurt for a healthier treat. You can even switch up the fruit depending on what you have.
Preheat oven to 350°F (175°C).
In a large mixing bowl, gently mix together the sliced peaches, blueberries, and cornstarch. Empty into 11x7 or 9x9 inch baking dish.
Add the oats, flour, sugar, butter, apple sauce, and salt to a bowl. Stir until the mixture holds together.
Crumble the oat topping evenly over the top of the fruit.
Bake for 40 to 50 minutes or until the topping is golden. Serve plain, or with a spoon of yogurt or vanilla ice cream for a treat!
You can swap the blueberries and peaches for any type of fruit you have!
To make this recipe dairy free or vegan, use a dairy free margarine or coconut oil in place of the softened butter.
