It’s easy to reach for a granola bar when you need a quick snack, but most packaged ones have lots of added sugar. By making them yourself you know exactly what goes in and you can even add in different flavours like nuts, seeds, and dried fruit. Give this quick and simple recipe a try and don’t be afraid to add your own spin on it!
Line an 8x8 or 9x9 inch square dish with a piece of parchment paper or aluminum foil. Make sure there is enough that it covers the sides by about 1 inch.
In a large bowl, add oats, rice cereal, chocolate chips, honey, almond butter, salt, and cinnamon. Mix until well combined.
Add mixture to prepared dish and place another piece of foil or parchment on top. Use your hands or a cup to press batter into the pan as hard as you can to stick the mixture together.
Place in freezer for 30 to 60 minutes to firm up. Remove bars from the pan, and cut in half. Cut each half into 6 rectangles. Wrap individually or store in an airtight container in the fridge or freezer.
To make this recipe gluten free, make sure you are using gluten free rolled oats and rice cereal.
To make this recipe nut free, you can use a seed butter in place of the almond butter, or use coconut oil instead and reduce amount to 1/3 cup.
