These easy-to-make naan bread pizzas are a great way to enjoy your veggies! Try customizing with your favourites. We like serving these naan pizzas as a healthy vegetarian lunch or dinner, or serving as a side with chicken skewers and another veggie!
Preheat oven or BBQ to 450 ˚F (230˚C).
In a frying pan over medium heat, cook the onion with 1 teaspoon of oil stirring often, until golden (about 5 to 10 minutes). Set aside.
Use a vegetable peeler to peel the zucchini into ribbons. Repeat with the asparagus, or cut into bite-sized pieces. Slice the cherry tomatoes in half.
Brush both naan breads with 1 to 2 teaspoons of oil. Spread the onion on top of each naan.
Top naan breads with zucchini ribbons, asparagus, and cherry tomatoes. Sprinkle both pizzas evenly with the mozzarella cheese.
If using the oven, bake for 10 to 15 minutes directly on the wire oven rack to crisp up the bottom. If using the BBQ, keep one side of the BBQ on, and grill the naan pizza on the side that is off for about 5 to 8 minutes. Be careful not to char the bottom!
Top with fresh sliced basil. Cut each naan into 6 slices. Serve with chicken skewers, or another protein and a veggie on the side like more grilled asparagus or a salad.
