Tacos are an easy, and delicious dinner option for a busy week. Lean ground chicken is a healthy choice as it has less saturated fat than ground beef. Try this recipe with your kids at home and add your favourite toppings!
Heat oil in a large frying pan over medium heat. Once the pan is hot, add the ground chicken and onions. Cook breaking up the pieces until the meat is no longer pink (about 5 minutes).
Stir in the chili powder, garlic powder, cumin, and salt. Cook for 1 minute.
Add the tomato paste and water. Cook, stirring until the water has mostly evaporated. The meat should look moist, not dry. Add more water if necessary. Set meat aside.
Place the frying pan back over medium heat with 1 teaspoon of oil. Cook the peppers until tender, about 3 to 5 minutes. Set aside.
Assemble your tacos! In one tortilla, add ½ cup shredded lettuce, ⅓ to ½ cup ground meat, and ⅓ cup peppers. Top with salsa and plain yogurt or your favourite taco toppings! One serving is 2 tacos.
You can use any type of ground meat in this recipe, although it is best to look for ones that are lean, or extra lean to decrease the amount of saturated fat.
Plain yogurt is used in this recipe instead of sour cream. Plain yogurt is a healthier choice as it tends to have less saturated fat. You can't even tell the difference! To make this recipe dairy-free, omit the yogurt.
Add canned lentils or black beans to your ground meat to add some healthy, fibre-rich vegetarian protein!
