Try making your own version of carrot cake, in a mug! You’ll be getting vitamins, antioxidants and fiber from the carrots, healthy fats from the flax seed, protein from the egg, and complex carbohydrates from the banana and oats. Just what we need for a healthy and satisfying on-the-go snack or breakfast!
Mash banana in a mug. Add the egg, and mix until combined.
Add oats, flax, carrot, cinnamon, vanilla, dried fruit, and nuts. Mix.
Microwave mug for 2 to 3 minutes.
Allow to cool slightly before removing from the mug. Shake it in the cup to loosen, and turn it upside down. Allow to cool.
Enjoy warm or at room temperature.
Flax seed can be replaced with 2 tablespoons rolled oats
