These tasty burrito crepes are a savoury take on breakfast that your whole family will love! Crepes are easier to make than people think, and don’t require any special cooking equipment other than a non-stick pan! Give them a try for your next family breakfast.
Heat 1 teaspoon oil in a non-stick skillet over medium heat. Add onion and sausage meat. Cook, breaking the meat apart into small pieces, until browned and cooked through.
Add tomato and spinach, cook until spinach is wilted.
Prepare the crepes. In a medium sized bowl, whisk together the flours, sugar, and salt.
In a small bowl, whisk together the eggs, milk, and oil.
Add the milk mixture slowly to the flour while whisking until the batter is smooth with no lumps. You can also use a blender to mix just until smooth and no lumps remain.
Heat a 9-inch non-stick skillet over medium heat. When hot, brush with oil.
For each crepe, use just under 1/4 cup of batter. Add to the middle of the hot frying pan, tilt and swirl the pan to spread the batter thinly over the bottom.
When the edge starts to peel off, flip over the crepe with a spatula. Continue cooking for about 10 seconds and remove from the frying pan.
To keep the crepes warm, preheat oven to 200˚F (90˚C). Place finished crepes in the oven on a plate or a baking sheet as you are cooking. Repeat with remaining batter.
Assemble your burrito. Spread the meat in the centre of a crepe. Sprinkle with cheese, and fold one side over the filling and roll to seal. Serve with a scoop of Greek yogurt and salsa or chopped tomatoes.
