Baked chicken parmesan is a great way to switch up your chicken! You can slice it up on place on pasta, or serve with rice for a delicious meal your family will love.
Preheat oven to 450°F (230°C). Line a baking sheet with foil or parchment paper. Grease lightly with oil. On a plate or shallow bowl, mix together the breadcrumbs, Parmesan, garlic powder, and pepper. Press the chicken breasts into this mixture to coat on all sides. If it does not stick, brush chicken breasts with extra oil before coating to help the mixture stick.
Place chicken breasts on baking sheet and cook for 25 minutes. The breadcrumb topping should be golden. Remove from oven and spoon 1 to 2 tablespoons of pasta sauce on the tops of each chicken breast. Sprinkle each with 1 heaped tablespoon of mozzarella cheese.
Place back in the oven and bake for another 5 minutes or until the cheese is melted. The internal temperature of the chicken should register 165°F (74°C) with an instant-read thermometer.
Serve with pasta, or other side dish with a vegetable on the side.
