Latkes are a delicious holiday tradition that you can enjoy with your whole family! Give them a try this holiday season or any time of year for a delicious breakfast as a hash brown.
Grate the potatoes using a hand grater with large holes. Place grated potatoes in a large bowl and cover with cold water.
Grate the onion using the large holes on the hand grater.
Drain the potato. Rinse and dry the bowl. Place the drained potato and shredded onion in a clean tea towel. Wrap in the towel and twist the cloth to secure. Squeeze firmly to remove as much liquid as possible from the potato and onion.
Place the potato in the bowl. Add the egg, cornstarch, salt, pepper, and breadcrumbs and mix to combine.
Heat a skillet over medium heat with 1 tablespoon of oil. Use a 1/3 cup measure to scoop the potato mixture into your hands, and press and form into a patty.
Cook for 3 to 5 minutes on each side until golden brown. Repeat with the remaining potato mixture and the remaining 1 tablespoon of oil.
Serve with apple sauce or a fried egg for a delicious breakfast.
