Crepes are a delicious breakfast that look difficult to make, but are surprisingly easy! They can be made sweet or savoury, but this version is a sweet variation made even better with yogurt and strawberries.
In a medium sized bowl, whisk together the flours, sugar, and salt.
In a small bowl, whisk together the eggs, milk, and oil.
Add the milk mixture slowly while whisking until the batter is smooth with no lumps. If the batter has lumps you can use a blender to smooth it out.
Heat a 9-inch non-stick skillet over medium heat. When hot, brush with oil lightly.
For each crepe, use just under ¼ cup of batter. Add to the middle of the hot frying pan, and tilt the pan to spread the batter evenly over the bottom.
When the edge starts to peel off, flip over the crepe with a spatula. Continue cooking for about 10 seconds and remove from the frying pan. Repeat with remaining crepes. To keep the crepes warm, preheat oven to 200˚F (90˚C). Place finished crepes in the oven on a plate or a baking sheet as you are cooking.
Top with yogurt, fresh fruit, and a drizzle of maple syrup or your favourite toppings.
