Cheesy Chickpea, Potato, and Broccoli Fritters

These Chickpea Potato and Broccoli Bites make a tasty snack, or side dish! They are filled with protein from the chickpeas, as well as broccoli.

Directions

Step 1 

Place potatoes into a pot with water and boil until tender. About 15 minutes. Drain. 

Step 2 

Place potatoes into a large bowl, with the chickpeas. Mash until mostly smooth with some larger pieces of chickpeas.

Step 3 

Cook the broccoli in a frying pan with a bit of water until tender. About 2 to 5 minutes. Drain and add to the potato mixture. 

Step 4 

Add the egg, bread crumbs, salt, pepper, parsley, and cheddar cheese. Mix well to combine.

Step 5 

Moisten your hands and form into 12 patties about ⅓ cup each. Coat the patties in flour. 

Step 6 

Heat a tablespoon of oil in a frying pan over medium heat. Cook the patties for about 5 minutes per side until they are golden. Add more oil as needed to cook the rest of the patties. Serve with tzatziki.
