This frittata makes a delicious breakfast or lunch. It has a delicious cheesy top, and is filled with vegetables!
Preheat the oven to 375°F (190°C). Grease a 9-inch baking dish with oil.
Using your hands or a clean kitchen towel, squeeze handfuls of the grated zucchini to remove as much water as possible. Discard the water, and place in a large mixing bowl.
Add the feta, flour, salt, and pepper to the mixing bowl, along with the eggs. Mix well until combined.
Pour mixture into baking dish, and sprinkle Panko bread crumbs on top. Grate extra pepper on top if desired.
Bake for 25 minutes. Turn your oven to broil, and broil for 2 to 5 minutes or until the top is golden. The frittata is cooked when a toothpick inserted into the centre comes out clean and the frittata is no longer wobbly. Allow to cool slightly before serving.
