Double Chocolate Peanut Butter Cookies

Bake up these tasty chocolate peanut butter cookies with your family. Instead of butter or oil, they use peanut butter for the fat and are bursting with flavour!

Double the recipe to make enough to give away to friends and family.

Directions

Step 1 

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2 

In a mixing bowl, mix together the peanut butter, sugar, egg, and vanilla until smooth. If the peanut butter is a bit hard, use a food processor to mix the wet ingredients.

Step 3 

Add the cocoa powder, baking soda, and salt to the peanut butter mixture and mix just until combined. Stir in the chocolate chips, leaving a tablespoon for topping the cookies.

Step 4 

Use a tablespoon to scoop the dough into 8 larger or 12 smaller cookies. Place on baking sheet about 1 inch apart, and press down gently with your fingers to flatten into a cookie shape. The cookies will not spread as they bake.

Step 5 

Gently press a few extra chocolate chips onto the top of each cookie..

Step 6 

Bake for 6 to 8 minutes. Remove from heat and let cool completely. The cookies will be more crumbly when they are hot, and will keep their shape better once cooled.

Tips & Variations

  • *These cookies won’t spread as they bake, so make sure you flatten the cookies before baking with a cup or your fingers.

  • *To make this recipe dairy-free, make sure to use dairy-free chocolate.
