Preheat oven to 375˚F (190˚C). Grease an 8-inch square baking pan with butter, and line with a strip of parchment paper letting it hand over the side.
In a bowl, make the crisp by combining the oats, flour, and brown sugar. Add the butter and maple syrup and mix to combine.
Add ½ the crisp mixture into the bottom of the prepared pan, pressing gently to cover the bottom.
In a saucepan, combine the cornstarch, cinnamon, and apple sauce. Whisk over medium high heat until thick and steaming. Mix in the sliced fruits.
Spread the fruit mixture over the crisp carefully in an even layer. Sprinkle with the remaining crisp mixture.
Bake bars for 35 to 40 minutes or until golden on top.
Let cool for 10 minutes in the pan before gently removing the bars from the pan by lifting up on the parchment paper. Allow to cool to room temperature before slicing into 16 bars.
